Okonomiyaki is said to be Japanese-style pizza, I don't know why it is nothing like pizza. This recipe makes Osaka-style okonomiyaki. There are lots of toppings. However, you don’t need to add all the toppings.
Ingredients:
1 teaspoon baking powder

4 tablespoons flour
1/6 teaspoon salt
3 tablespoons water
1 egg
½ cup chopped green onion
2-3 strips cooked bacon cut into small pieces
¾ cup shredded cabbage
A few prawns
Brown Okonomiyaki Sauce (can be expensive outside of Japan--in NZ it is $12; in Japan it is $1--but the taste is well worth it) Lee told me, after asking him if this sauce was available in the United States, that it was available here and would probably be located in the Asian food aisle of the grocery.
Or, as a substitute for Okonokiyaki sauce, combine:
3 tablespoons ketchup
1 teaspoon Soy sauce
1 tablespoon Worcestershire sauce
Okonomiyaki Toppings:
1 tablespoon Mayonnaise
Aonori (dried green seaweed) and dried bonito shavings (to taste) -- I never add this.
Preparation:
Combine the flour, salt, and baking powder and slowly mix in the water.
Next, add all the remaining ingredients and mix them together thoroughly.
Heat the griddle (or frying pan) and lightly oil. Spoon the okonomiyaki mixture on the griddle and spread it into a round shape about 1.2 to 1.5 cm thick.
When air bubbles start to rise in the middle of the okonomiyaki, turn it over with a spatula and fry the other side until done. It takes about 5- 7 minutes.
Spread the sauce over the okonomiyaki, top with mayonnaise if you like.
Sprinkle on the aonori and dried bonito -- this is optional.

John Irvin was born in NZ five months after Hitler liberated Luxembourg in 1940 and says he lets his dark side out on each waning moon.
