Chicken Breast Scampi
A Lauren Carr Favorite


Specialty of The Spencer Lounge at the Spencer Inn Resort on Deep Creek Lake, Maryland

In the lounge at the Spencer Inn Resort, their Chicken Breast Scampi was a favorite of the famous mystery novelist Robin Spencer, the Inn’s late owner. She would have it served over rice, though some guests would prefer to serve it over linguini. The Inn’s Chicken Breast Scampi is served with a Caesar salad and garlic Texas toast. Ms. Spencer would always accompany this dish with a glass of Orveito, an Italian white wine from her, now her son Mac Faraday, private stock. For the Inn’s guests, they recommend a nice glass of Pinot Grigio.

Ingredients:
2-3 lbs chicken breasts, bones and skinned, cut into 2 in x 1 in pieces
½ lb (2 sticks) butter or margarine
4 garlic cloves, minced
2 scallions, minced
1 tablespoon chopped fresh parsley or 1 teaspoon dried parsley)
2 teaspoon fresh dill or 1 teaspoon dried dillweed
½ teaspoon oregano
½ teaspoon salt
½ teaspoon pepper

Directions:
Preheat oven to 350 degrees F.
Place the chicken in a 9’x13’ baking dish.
Melt the butter in a saucepan over low heat. Add the garlic, scallions, parsley, dill, oregano, salt, and pepper. Cook for 2 minutes. Pour the mixture over the chicken pieces. Bake for 10 minutes. Turn chicken pieces over. Bake for another ten minutes. Turn oven to broil and put chicken under broiler for 3-4 minutes until lightly browned. Serve over rice or linguini.

It’s Murder, My Son – Review by Martha A. Cheves, Author of Stir, Laugh, Repeat

A noise outside made her jump out of the recliner.  She glanced at the clock.  Almost nine.  Could Chad have decided to come out when I mentioned my appointment with the divorce lawyer?  Maybe he does love my money more than he loves Rachel.  She listened.  Nothing except the wind signaling the blizzard’s approach.  Maybe I should call David?  No.  It wouldn’t look good if Chad found him here.  He’s already suspicious.  The German shepherd began scratching at the back door.  Not again, you damn dog!  When you aren’t wanting out or in, you’re digging up the back yard.  With a groan, she pulled herself out of the recliner and let the dog out onto the patio.  As long as she was up, she poured herself another martini and admired her reflection in the mirror behind the bar before returning to her seat for another sitcom.  Her mind sucked in by the television, Katrina was unprepared to fight when her killer attacked and pinned her down by her throat.'
“Did you really think I was going to let you leave?” she heard through the roar in her ears while gasping her last breath.

The front foyer of Spencer Manor stretched up two stories to the cathedral ceiling paneled in cedar.  Granite slabs made up the floors throughout the home, including the three steps that led down to the dining room which opened up onto the deck overlooking the lake.  Colorful afghans were draped across leather furniture in the living room, which was twice the size of the one in the home Mac’s ex-wife had won from him thirty days earlier.  Stone fireplaces commanded every room.  Every window and door provided a view of Deep Creek Lake.  This was just a small portion of what Mac Faraday, policeman and illegitimate son of mystery writer Robin Spence, inherited at her death.
When Robin’s solicitor tracked Mac down, he was just getting over a divorce where the court awarded his wife, who was having an affair with the assistant district attorney, their home as well as everything else of value.  Now Mac finds himself with more money than he could ever imagine.  He has become a retired policeman and multi-millionaire overnight.  But that’s not all he has become.  Mac also finds out that he has a ½ brother who not only lives in Spencer but who is also a policeman, as was their father.  And then Mac finds himself to be the owner of Gnarly a German Shepherd retired from the military with a dishonorable discharge.  Oh yeah, he also finds himself working with the police to solve several murders, both old and new.
It’s Murder, My Son was a hard puzzle to put together.  It starts out with one murder which leads to another then another and so on.  But are they all connected or individual crimes?  About half way into It’s Murder, My Son I just knew I had determined who committed at least 2 of the murders.  My suspect had no alibi where everyone else did.  I will tell you that I was wrong.  Author Lauren Carr took this book all the way to the end before allowing you to see the who, the why and the how.  Great Book and I hope to read more Mac Faraday Mysteries.

Lazy Daisy Cake
  A Rich Myers Recipe


2 eggs
1 cup of sugar
1 tsp of vanilla
1 cup of cake flour
1 tsp of baking powder
1/4 tsp of salt
1/2 cup of milk
2 tablespoons of butter
combine eggs, sugar and vanilla - beat until thick
add sifted dry ingredients
heat milk and butter to boiling point
add to above and bake in buttered pan (8X8) at 350 degrees 30 to 40 minutes
remove from oven and frost

Frosting
3/4 cups of brown sugar
1/2 cup cream
1/2 cup melted butter
1 cup coconut
frost cake and return to broiler until golden brown

The Accident – Review by Martha A. Cheves, Author of Stir, Laugh, Repeat
 
‘In the space of only a few seconds, Michael Fitzpatrick knew that impact was inevitable.  His heart rate accelerated and his breathing became shallow as he used his hands on the steering wheel of his sports car as a brace, pushing his upper body into the driver’s seat, anticipating the opposite forces to come.  He was able to see the driver of the Mercedes he was about to strike for only a moment and, if asked, would only be able to say that the driver was a woman with blond hair.  The event, in his opinion, was moving at warp speed as first the bumper, then the hood of his car, made impact with a force that broke the morning stillness with metal bending metal, rendering the type of noise where one knows for a certainty something bad has just happened without having to have witnessed it. ‘
 
Michael Fitzpatrick is the son of Francis Fitzpatrick, Congressman from the 9th Congressional District of Massachusetts.  Congressman Fitzpatrick is also the author of a bill referred to as “Faith for Life”.  The bill states the right of the unborn to the full protection of the Constitution to include every federal law related to every US citizens to the extent that no state law can override it.  In short – abortion is murder.  The lady in the Mercedes that Michael has just driven his car into is Jessica Billington-Bracketon, wife of John Brackton, one of the largest political backers in the city.  To top it off, Jessica is pregnant and loses her baby during the wreck. 
 
Was the wreck an accident caused by the possibility that Michael had been drinking?  Was it due to there being black ice on the roads and Michael simply lost control?  No matter the reason, John Brackton is determined to have Michael prosecuted for the death of his unborn child
 
As the real “facts” come out in the story of The Accident, I find myself being torn between who should really be on trial.  There is the reporter who lies to get whatever he needs to make an exposure.  There is the Representative Sullivan who wants the congressman’s seat and will do just about anything to acquire that seat, as long as his own skeletons stay in the closet.  And there is Jessica herself who was actually heading for a very confidential appointment when the accident occurred.  So, as the truths are exposed, how will the jury vote.  Will they find Michael guilty or innocent in the murder of the Bracketon’s unborn child
 
This book is a real page flipper.  I wanted it to end but wanted it to keep going too.

Cynthia's Italian “Momma Mia” Apple Pie

3 varieties of apples, peeled and cut into chunks (I grew mine-they are tart, firm, yet sweet, green, yellow, and red. Make sure FIRM, not mushy)
Brown Sugar
Crushed Fennel Seed
2 Meyer Lemons (juice and rind)
1 Cup Raisins
2 Tbsp dried mango (optional)
2 Tbsp dried pineapple (optional)
1/2 cup dried cranberries (optional)
pinch of salt
1 Tbsp cornstarch
Cinnamon
Pumpkin Spice
All Spice
Cloves
Nutmeg
Vanilla
Butter (real)
Cinnamon Sugar

In a big bowl, I add the 3 varieties of apples until I have a huge mound. My apples were from my tree so all different sizes. Probably a dozen apples will do it. Squeeze the juice of one full Meyer Lemon (those are sweet lemons) and toss the apples. Finely grate the rind from one full lemon and add to mixture along with all the spices, brown sugar. Mash fennel seeds, add to the apple mixture. In another bowl mix the juice from the 2nd lemon with the cornstarch and vanilla. Pour onto apples and mix. Add the mango, pineapple and/or cranberries.

Taste an apple to see if you need more of anything.

Cook at 350 degrees until bubbling and browned.

For pie crust, you can use any pie crust recipe or even buy a pie crust if that's easier. My secret is to bake the bottom part of the pie crust for 10 minutes on 350 before filling, sprinkled with cinnamon and dab of butter. It makes the crust flaky on the bottom.

Put into your partially baked piecrust. Dot with small dabs of real butter and a sprinkle of cinnamon sugar. After rolling a top dough, place it gently on top of the big mound and with your fingers squeeze the edges over pie tin so that the juice doesn't escape. With a knife of fork, make a design on the top of the crust and prick a few air holes. (I made a STAR, of course) Brush the top of the crust with milk to make the crust brown perfectly. Add a few more cinnamon sprinkles.

Bake in 450 degree oven for about 30-40 minutes or until browned.

Your house will smell great. Eat with ice cream, gelato, or whipped cream.

Be the Star You Are! For Teens – Review by Martha A. Cheves, Author of Stir, Laugh, Repeat

‘The three tools for being a star and living your dream:

1. Smile – When you smile, you can’t be sad. A smile brightens the lives of those you meet, and their joy bounces back to you.

2. Have Fun – Every moment is more satisfying when you decide to be playful Having fun is adjusting your attitude so even life’s emergencies can be met with style and seen in perspective.

3. Be Wild and Whacky – Taking measured risks and putting yourself in potentially uncomfortable situations could be beneficial. Ask for what you want and don’t be afraid of failure. Remember that failure is fertilizer.


I could actually sit here and write a 10 page review for Be the Star You Are and still not cover everything. This book is one I plan to keep within reach at all times. The short stories are actually life experiences of not just the author Cynthia Brian but other that have contributed as well. The topics range from Achievements and Adapting to Dating and Letting Go. This book is written for teens but I’ve found them useful for all ages.

As I read the different stories, I found myself relating to most. Some from my younger years and some from my “older” years. I also found myself wishing there had been a book like this around when my own children were growing up. Be the Star You Are is actually more than stories. Author Cynthia Brian has included exercises that will help teach through action. In the chapter “The Gift of Affirmation” story author Davis Lunsford talks about his pastor sending a handwritten letter and a dollar bill every time Davis’ name appeared in the paper. To Davis, the letter was more important than the publicity and the dollar bill combined. In the exercise, Cynthia Brian suggests you write a letter to someone who encouraged you in the past. She suggests that you write a letter to someone you would like to pat on the back and then write a letter to yourself picking out something positive you’ve been doing.

One of my favorite chapters is called “The Gift of Financial Literacy” by story author Heather Brittany. Heather talks about allowances and how they were not a part of her and her brother’s lives. Instead, their mother allowed them to earn points. Instead of paying them to do household tasks, their mom created a point system. They made up a list of the things they both really wanted. Then there was a number of points attached to acquire each item. They listed things like movies, backpacks, special meals, bicycles, skateboards, skis, and even trips. When they saved enough points, they could cash them in for the items they wanted. Their mother even kept a bulletin board which showed the weekly tally of their points. They were being taught to work, earn and save their own money and spend it with care.

I could go on and on about the stories and lessons taught in Be the Star You Are. To me, this is a book that needs to be read by everyone with children. Actually it would benefit everyone to not just read this book but to listen and learn as you read. If my kids happen to read this review, you can bet that you will each be receiving a copy for Christmas this year in hopes that you too will find the stories and exercises helpful during the growing up stages of your own children.

One 13 X 9 inch Dish
One Organic Onion, Chopped
Two Cans Organic Kidney beans
One Can Organic Pinto Beans
1/2 Cup Organic Ketchup
1/4 Cup Organic Brown Sugar
2 Cups Organic Cheddar Cheese
One Box Organic Whole Wheat Biscuit Mix (or make your own from scratch)

Spray pan with Extra Virgin Olive Oil or Canola Oil (Organic)
Mix together all ingredients except cheese and biscuit mix.
Spread top with grated cheese.
Top evenly with biscuit mix.
Cook in oven for 45 minutes at 350 degrees.

Serves 6-8

‘When the two women form the hotel reached the tenth and top floor they went to the beach side where there was a balcony overlooking the scene.  “Oh my God!” said one.  Words failed the other, for in the distance, about a mile out they could see a giant mountain of water the size of which their brains couldn’t comprehend.  And it was building larger as it headed for the coast.  They could still see several people way out who seemed oblivious.  They began shouting at the top of their lungs, knowing even then that they wouldn’t be heard.  But maybe there was a chance still for those on the beach below.  Many of them looked up at them and tried to understand why they were screaming.  But some of the people had already seen the big wave coming fast and hurried away from the beach. Some were screaming themselves as they ran.  But they could see many small children looking lost.  Nobody was taking them away.  They would surely be crushed by the oncoming waters.  All at once the two women stopped their entreaties and could only watch as the horrific scene played itself out.  The wave had already reached those who were the furthest out.  Of course they couldn’t hear the screaming, but they did begin to hear the low rumbling sound as the water came closer.  It sounded like a freight train if you put your ear to the ground near the tracks.’

Dr. Mel Hawkins (Hawk) and Shauna Troy have formed a group that will study the sudden increase of natural disasters, and as 2012 approaches with the predictions that earth will no longer be, the team find themselves running out of time.   Hawk and the whole team have agreed that there is the possibility that people are bringing the destruction on themselves with their thoughts and wishes.  With this possibility, the team relies on its member Noah Meade, who is a medium, to contact some of those killed in these mass destructions.  During one of the group sessions with victims of a major flooding, Noah is working through his “crossed over being” Jackson.  As the team listen to messages from people on the other side, Jackson is suddenly taken over by a voice that isn’t earthly.  This voice blames humans for the conditions of earth.  It is the belief of the team that this voice may be from an alien.

Discovering that there may be a chance of contacting aliens that have passed on, Hawk and Shauna decide to have Noah try to contact them to see if they can shed light on what might be done to stop earth from being destroyed.   Fortunately for them, Noah is able to get through, but unfortunately for them and all of earth they are told that earth is in the process of cleansing itself and to do this, humans must be destroyed so it can start over again.... Just as it did with the destruction of the dinosaurs.   These aliens feel that no animal is a plague to the earth like the humans are.  So, with the increase in earthquakes, floods, and even medical epidemics, the task before this small group of 7 is to do whatever they can to stop the destruction of the world?

Quantum Earth took me on quite a ride.  If you listen to the predictions and theories for the year 2012 you will hear:  there will be increases in earthquakes, tsunamis and hurricanes, left will be right and right will be left, just to name a few.  Are we really creating these changes with our own minds?  I think I’ve read somewhere that “thoughts attract” so only think good thoughts.  I’ve for one have decided that, just in case this is true, I'll think as many positive thoughts as possible.

Garlic and Lemon Spinach
  A Jenny Lucas Recipe
(serves 4)
Ingredients
1lb fresh spinach (shredded)
2 freshly crushed garlic cloves
2 tbsp olive oil
juice of 1/2 lemon
salt / pepper to season
Method
1. In a large frying pan heat the olive oil.
2. Next add the garlic and spinach, stir constantly and cook until the spinach feels soft.
3. Remove spinach and garlic from the pan and place in a bowl, pour the lemon juice over the spinach, season with salt and pepper, mix well and serve. Fast and simple.

‘Remember that night in the car, David?  I started to tell you, but you broke up with me first.  You said things could never work for us.  You told me our fathers would never get along.  You told me you didn’t share my desire for having a family.  How could I tell you you were going to be a father right after you said you never wanted children?  When she was born, I called you from the hospital as I held her in my arms.  I couldn’t wait to show you what we’d created, but your answering machine picked up and I heard “David and Lindsey Preston aren’t here to take your call…”  I didn’t know you’d gotten married.  It had been less than a years since we broke up.  You wouldn’t believe the shock I felt, the betrayal, the pain… I didn’t want to cause trouble for you… I couldn’t….’

Jenny Lucas is the Prodigal Daughter returning home after walking away six years ago.  David Preston had thrown her away when she needed him the most.  When she was pregnant with their daughter Isabella.  Now she’s bringing her daughter home to meet the family she’s never met, including her father.  But Jenny isn’t renewing the relationship with her own father as well as David for old times’ sake.  She’s doing it out of necessity.  She must find a home for Bella because she is dying with cancer. 

The Lucas', as well as the Preston family, have a lot of baggage to overcome.   Jenny’s dad insists that David’s father killed her mother by misdiagnosing her illness.  And her death is something that he’s never been able to get over making it difficult for him to get close to Jenny.  So, hating the Preston family as much as he does, he insists that Bella should be raised by him.  David, as well as his family, have to overcome the fact that Jenny has done something that he and his wife Lindsey haven’t been able to.  She has given him a child, which has made him determined to have full custody of Isabella no matter what it takes.  Bella, on the other hand, has to learn to give to others something she has only had to share with her mother… love.   And while wading through these obstacles, everyone has to accept Jenny’s dying.  Can they all put aside their differences and help Jenny and Bella make their transitions as comfortably and positive as possible? 

I’ve never read a book quite as touching as Crossing Oceans.  The characters are all written very strongly.  Their courage, and sometimes lack of courage, is something that I think will stay with me for a long time in hopes that if I’m ever put into either of their positions, I can remember their strength exposed in Crossing Oceans It is one beautiful book.

Zucchini Frittata

An egg dish that tastes and looks like pizza. Serve with a salad, fruit and bread.

SERVINGS: 4 servings
CARB GRAMS PER SERVING: 18

INGREDIENTS:
 
Nonstick cooking spray
4  cups shredded zucchini (1 pound)
½ teaspoon salt
1 medium onion, chopped
3 eggs or 3/4 cup refrigerated or frozen egg product, thawed
½ cup finely shredded Parmesan cheese (2 ounces)
1/3 cup all-purpose flour
1 teaspoon snipped fresh basil
1/8 teaspoon ground black pepper
½ cup shredded mozzarella cheese (2 ounces)
1 medium zucchini, very thinly sliced (1-1/4 cups)
2 large tomatoes, sliced
Sliced pitted ripe olives (optional)


1. Preheat oven to 350 degrees F. Lightly coat 12-inch pizza pan with cooking spray; set aside.

2. Spread shredded zucchini on large platter or shallow baking pan; sprinkle evenly with salt. Let stand for 15 minutes. Using paper towels, gently press excess moisture from zucchini.

3. Meanwhile, lightly coat small skillet with cooking spray; heat over medium-high heat. Add onion; cook until onion is tender. Remove from heat.

4. In large bowl, combine eggs, Parmesan cheese, flour, basil, and pepper. Stir in shredded zucchini, cooked onion, and mozzarella cheese. Pour into prepared pizza pan, spreading evenly.

5. Bake about 25 minutes or until top is lightly browned and eggs are set. Arrange zucchini slices on top of baked mixture; add tomato slices. If desired, sprinkle with olives and additional Parmesan cheese. Bake for 10 minutes more. Makes 4 servings.

When I picked up Flashing My Shorts I had no idea of what to expect.  What I found was the creations of a man who can take any word, object or feeling and turn it into a short story.  Reading Buttaci’s writings was almost like reading poetry.

In Two Worlds, Will Dennison lives two lives, one in the real world and one in the nightmare world.  In Invitation President Clayton Powell is invited to be transplanted to Mars. Doomsday. We’ve been warned, now the world is dying around us.  I Wish I Wish – be careful what you wish for.   And then there is my favorite:

Saturday at the Zoo
Only a tall iron fence separated the two families.  “That girl is wearing a red dress, just like mine!” said Missy, then made a move to get closer to the fence.  “Behave,” said Mrs. Jackson.  “Keep your distance from the cage or we’ll go home this minute.”  She took her daughter’s hand and held it tightly.  “Go ahead and read the sign, Missy.  What does it say?”  Mr. Jackson looked at her sternly.  Missy had no trouble reading the official zoo plaque with its overdone list of synonyms, Do not annoy, badger, bother, disturb, harass, harry, heckle, irk, provoke, peeve, pester, tease, tantalize, or feed zoo creatures.  Strict penalty for violators.”  The caged little girl with Missy’s dress stared back at them. She too had a mother and father who held her hands and seemed to be warning her to stay clear of the fence.  “Oh, the smell!” said Mrs. Jackson, pulling Missy back.  “Why can’t the zoo attendants give them a shower now and then.  They’re filthy, Quentin.  I think we’ve seen enough,” though Quentin nodded his head, he seemed in no hurry to leave yet.  He watched his daughter staring bit-eyed at the other family.  “Aren’t they amazing?” he asked her.

Missy heard him, but was busy now playing a game with the other girl.  Missy would put her hand on her head and the other girl would do the same.  Then Missy would stick her tongue out and wait for the caged girl to follow suit.  “They are so smart!” said Missy.  Her mother scowled, but her father smiled.  Other zoo visitors were gathered in front of the lion’s den, the elephant swamp, the monkey’s tree, the cawing, chirping, whistling birds behind the very tall aviary fence.  Only the Jackson watched the caged family in front of them.  Quentin Jackson didn’t allow the smell inside the cage to upset him.  He inhaled the air and knew it was good to be on this side of the fence.  Free.

“They look like us, don’t they, Mommy?” said Missy.  “That little girl with the blond hair has a mommy and daddy like me.  They need new clothes but they look a lot like us.  I wish my hair was blond instead of this old black!”  Then Quentin Jackson began explaining about the family in the cage in that deep voice of his which he usually saved for his students at the university.  “A long time ago, believe it or not, we were the families in the cage.  Oh, maybe not a cage in the zoo but in a cage nonetheless.  The little blond and her parents belonged to the free families who kept the zoos, the churches, the governments.  Civil war came many years ago; even before my own Granddaddy was born.  Civil war raged between the True-pers, holding up their red-white-blue, and the Usur-pers demanding their rights by virtue of fairness and the injustice of slavery.  “Who won, Daddy?”

Now is when I tell you you’ll have to read the book to see who won, who are the True-pers and who are the Usur-pers.  The ending took me completely by surprise.  I never saw it coming.

Cock-A-Leakie Soup One of Julie Achterhoff's favorite recipes

One Stick Butter
6 Potatoes
One Onion
2 Leaks (Clean leaks very thoroughly and chop roughly)
One Can Chicken Stock
6 Cups Water
One Cup Cream

Melt butter in large pot. Dice potatoes and cook in butter for five minutes. Add chopped onion and Leaks. Add salt and pepper to taste. You can add other spices as well to jazz it up a bit. Cook for ten minutes until onions are soft. Add water and chicken stock. Bring to a boil, then simmer without lid for one hour. Remove from heat and blend with mixer until creamy. Add cream and serve. I have made this every Christmas Eve since I was twelve. It's an old family recipe.

‘If only she could remember her true real life and what had happened in it to cause her to be stuck in her dreams.  Was she even a writer?  That thought struck her hard.  She could have just created that fiction from her imagination, too.  She was having an identity crisis.  Who was she really?  Was she any more real than any of the other dream images that played through her mind?  Then she focused on one of the main themes of her recent dreams – the bad man who had kidnapped her.  Maybe that kept popping up because it had a grain of reality to it.  Maybe she had truly been kidnapped.  Maybe she was still unconscious in this guy’s basement.  Oh, God.  That must be it, she thought.   But she had gotten away from him in every dream scenario, too, hadn’t she?  Maybe she had escaped, but was brain dead.  No.  She wouldn’t be able to dream if that were the case.  The only other possibility was that she was in a coma?  If so, for how long?  Her intuition said that felt right, that she was in a coma.  If only she could remember what happened.’

Dreams take us to other worlds and dimensions.  But what brings these dream about?  Are they pieces of memory from our past?  And how much do we actually contribute to what happens when we dream?  Are we able to add and delete characters.  Even during a nightmare, are we able to defend ourselves by conjuring up defense weapons?

In the case of Marie, where is she?   Who is she?  Who is Murphy?  How did he get into Marie’s dream?  Is everything really a dream or is she simply lost in another world?  How will she find her way out of her dream and back into the real world?  Can Murphy go with her?  What is she trying to accomplish and why is everyone telling her she has to wake up?

They say you dream nightly but only remember a few.  I have no idea if that’s true but I do know that after reading Deadly Lucidity I’ve found myself wondering more and more about the dreams I do have and do remember.  And as with the character Marie, wouldn’t it be nice to start a dream, wake up, go back to sleep and restart that dream?  Sometimes yes.  Sometimes no.

Altoona Noodle Casserole

This is Mike Greer’s favorite dish down at the Regal Cafe. It’s a favorite at the author's house too. This is a healthy, gourmet version of this classic dish. Prep time: 40 minutes.

INGREDIENTS

8 ounces whole-wheat egg noodles
1 tablespoon extra-virgin olive oil
1 medium onion, finely chopped
8 ounces mushrooms, sliced
1/2 teaspoon salt
1/2 cup dry white wine
6 tablespoon all-purpose flour
3 cups nonfat milk
1/2 teaspoon freshly ground pepper
12 ounces canned chunk light tuna, drained
1 cup frozen peas, thawed
1 cup finely grated Parmesan cheese, divided
1/2 cup  breadcrumbs

COOKING DIRECTIONS

Bring a large pot of water to a boil. Cook noodles until just tender, 6 to 8 minutes or according to package directions. Drain and rinse. Position rack in upper third of oven and preheat broiler. Meanwhile, heat oil in a large ovenproof skillet over medium-high heat. Add onion, mushrooms and salt and cook, stirring often, until the onion is softened but not browned, about 5 minutes. Add wine and cook until evaporated, 4 to 5 minutes. Sprinkle flour over the vegetables; stir to coat. Add milk and pepper and bring to a simmer, stirring constantly. Stir in tuna, peas and 1/2 cup Parmesan until evenly incorporated. Then, stir in the noodles (the pan will be very full). Remove from the heat. Sprinkle the casserole with breadcrumbs and the remaining 1/2 cup Parmesan. Broil until bubbly and lightly browned on top, 3 to 4 minutes.
Serve and enjoy. Serves 6

“Millionaire found bludgeoned, lover held,” the headlines screamed, or something to that effect.  I read some of the articles and it all came back.  Sikes, heir to an old Philly family fortune was found murdered by his homosexual lover, Oscar Boss.  Boss was found unconscious at the scene, covered in blood.  He was arrested, tried, and convicted after a sensational trial that made the newspaper publishers happy for months.  Boss had no defense.  He admitted to breaking in to the house, he was high on a variety of drugs and, worst of all, his fingerprints were all over the murder weapon, a heavy candelabra.  Boss maintained his innocence throughout.  He claimed he had a witness, a woman fleeing the scene.  The mysterious woman was never found, although the DNA of several women were found in and around the mansion.

Michael Greer is a private eye in the town of Altoona, PA.  He keeps an office in back of a strip mall church called, Church of the Rising Son.  The pastor Alphonse Brown, or just Pastor Al to his friends, isn’t your ordinary run of the mill pastor.  He runs AA meetings, weight watcher meetings, group therapy sessions and any other group that allows him to make money on the side.  By being involved in these groups, there isn’t much that goes on in Altoona that gets past Pastor Al and this usually works to Mike’s advantage when it comes to his cases, as in the case of the Sikes murder.  Without a nudge from Pastor Al and him telling Mike who he should talk to, an innocent man would have been put to death.  Of course the bonus that went along with his finding the truth gave him a push too.

One of the first things I found while reading The Greer Agency was that it was different.  Very different.  Where most “who-done-its” are made up of one case that you follow from the beginning to the end of the book, The Greer Agency gives you a different case story with each chapter but still allows you to follow what is going on with the star characters – Mike, Susan and Pastor Al.  I will admit that the beginning of the 1st story reminded me of a Marlowe, Spade or Wolfe novel due to Mike referring to himself as a “gumshoe” but that likeness lasted for 2 pages and from there on I read stories that would make all three of these master sleuths envious.  The characters are believable, the stories are well written and I really found myself wanting to get to the next story to see what trouble Mike would find himself falling into and how he would solve the mystery.

Take one can of your cat’s favorite food – one with gravy or oil is the best.
Stir in about a quarter cup or less of leftover peas or carrots.
Leave it for a few minutes so the oil or gravy flavor soaks into the food.
Serve and watch the leftovers disappear!

‘My name is Mavis, and I am a very lucky and fortunate cat.  Many of my sisters and brothers are not so fortunate, and wonder in this world, wondering where their next meal will come from, if we will get sick, and what creatures might want to attack us and cause us harm.  But I was a lucky cat, I found a home.’

Mavis’ story brings to light the misfortune of those animals that are left to fend for themselves in the outside world.  It brings awareness to our human responsibilities when it comes to animals of any breed.  And it also shows us of how, we as humans, are responsible for the mistreatment of these animals by not having them spayed/neutered and properly cared for.  So, after reading this book, if you get the urge to help but can’t adopt one of these beautiful animals yourself, at least help by supporting the shelters in your own community.

A quote from Author Joyce White, “poets and artists… we make everything a game.  We play connect-the-dot with words and feelings, paying close attention to the sound and flower of our memories, as well as their arrangement on the page.  I play connect-the-dot with sentences, images and/or word pictures.”
 
Author Joyce White puts her own life on paper as she explains how Art Therapy actually became her lifeline to survival.  Being an author as well as an artist, Joyce uses writing as a way to deal with depression.  “Writing is kind of like capturing what you know, what you think and what you have to say altogether in one place.”  “Writing is sort of like talking without being interrupted.”  Through any form of art, we’re relating to the world around us, past, present and future.  And just as petting an animal is said to bring down the blood pressure and stress levels in our lives, Joyce teaches that art reduces stress, ill health and depression as it keeps us busy doing something we love.
 
Art can take us back in time by allowing us to be a child again.  Whether it be writing in a journal, as we did when younger but calling it a diary, doodling pictures on a piece of paper or even on the computer, to just taking a box of crayons and drawing, all will take us back to a peaceful time and actually make us feel young again, which in turn will, make us feel good.
 
I’ve given some of Joyce’s ideas a try.  I’m not an artist but I do remember enjoying coloring with my kids in their coloring books.  They are grown now so I had to go out and buy a box of crayons and a coloring book.  I took the box of crayons, put them to my nose and took a deep breath.  Memories!  I opened my coloring book to a page and started coloring.  Memories!  And when I looked at my finished picture.  Memories!   All of these memories took me back to younger days in my life and I did feel like a kid for a few minutes and I noticed something else.  I felt relaxed.  I felt as if every stroke with the crayon took a bit of stress out of my body and I felt good! 
 
No matter who you are nor what you’ve been through in your life, I have no doubts that you will be able to relate to at least one situation and/or set of feelings that inspired Joyce White to write her book Sculpting the Heart – Surviving Depression with Art Therapy.  I also believe that you, like myself, will find help in her Art Therapy.

Cheesy Corn Chowder
  A favorite recipe of Tracy Krauss
1 large potato, peeled and diced
2 cups boiling water
3 Tbsp. butter
1 small onion chopped
3 Tbsp. flour (I still prefer white flour)
1 ½ cups milk
1 ½ - 2 cups grated cheese
2 cups corn – fresh or frozen
Salt and pepper to taste

Cook vegetables in water until tender.  Add butter.  Mix milk and flour together to make a paste and add to the mixture.  As it begins to thicken, add the cheese, salt and pepper.  So easy and so good!  Mmm!  Sometimes I omit the onion or potato, depending on time and what I have in the refrigerator.  It also works well with other vegetables such as broccoli, cauliflower, or celery.

His crew had been meticulously digging under the site of an ancient temple – a sacred site stringently protected by the government of Zimbabwe.  The temple site itself had been unearthed decades before, but legend had led to speculation that an even older civilization had once used the spot.  Mark had been honored when asked to assemble a team of specialists to investigate the possibilities without compromising the original excavations.  It was painstaking work.  But already, after only five months, the team was rewarded with signs that the legends were indeed rooted in fact.  Under the temple mount they had discovered an even more ancient burial ground with an intricate system of tombs that seemed oddly more technologically advanced than the layer of simple graves directly above it.  This wasn’t entirely unexpected; history often bespoke of a more barbarous people supplanting a superior civilization.  But there was more… so much more.  There was a sense that they were on the verge of something big – monumental, even.’

Dr. Mark Graham and his team of archaeologists have made a discovery that would re-write history as we know it today.  Not only would they be able to prove that earth was younger than historians believe but they would also be able to prove that prehistoric creatures and man did exist together, creating a large gap in the theory of evolution.  

Raised in a Christian family, Mark believes in the Bible, but due to his scientific mind, he has doubts regarding how the earth and man actually evolved.  With the finding of a tomb holding a human giant as well as the wing bones of a pterodactyl, his belief and theory start to dissolve.  With the sediment found around the grave, there are even signs of a possible flood taking place many years before.  And if the calculations are correct, this flood was none other than the great flood that covered the whole earth during the days of Noah.  But, there are those who will stop at nothing to prevent these finds from being shared as well as those who will stop at nothing to make sure they are shared.  So, as Mark’s scientific mind begins to change and grow with new ideas, so do the problems preventing him from going public, leaving him in a position of not trusting anyone, including his own team.  And as his faith in God grows, the problems get worse.

As I read And the Beat Goes On, I became aware of how scientists can, and I’m sure have, played down the Bible’s teaching of the creation of earth, man and all of God's creatures.  I take the Bible as my history book.   I can also see how a find such as the one talked about in this book would stir up some real problems.  It would actually require that history and science books be rewritten.  Could it be possible that finds such as this really have been found?  Have they been withheld from the public?

Gooey Butter Cake
  One of Diane Wylie's favorite recipes


1 box yellow cake mix
1 8 oz. package cream cheese
1 stick margarine, melted
3 eggs
1 box powdered sugar

1. Mix together cake mix, margarine, and 1 egg.

2. Spread in 9 x 13-inch greased and floured pan.

3. Beat cream cheese and 2 eggs together for 3 minutes. Add 1 box powdered sugar gradually.

4. Pour mixture over cake mixture and bake at 350° for 30 minutes.

5. Sprinkle a small amount of powdered sugar over finished cake

Serves 9 to 12


Adam’s Treasure (an Historical Romance that will keep you turning the pages) – Review by Martha A. Cheves, Author of Stir, Laugh, Repeat
 

‘Oh, my! What have I done?  To ride away with a man who had put his hands under her skirt, tried to steal her prize, and broke into her bedroom didn’t make much sense.  However, staying there with that other man, Dawson, coming after her had not been a possibility.  But had she been kidnapped, or had she gone willingly?  The lines were blurred. To be sure, she had not fought Mr. Skelding after he dumped her out the window.  Where could she go but with him?  Her mother had taught her, better the devil you know, than to meet the devil you don’t.  She had made a split-second decision to go with the agent.’

Put yourself in Marilla Logan’s position.  She had left New Jersey after the deaths of her family, finds herself working in Smythe Tavern, deep in the south, shortly after the end of the Civil War and there laying on the floor is a packet that just might be her ticket out of this nasty job and town.   Little does she know but this “little ticket out” becomes a “big ticket to trouble.”  Apparently a group that calls itself the Knights of the Golden Circle are in the process of organizing another up rise within the south.  And the man with his hand up her skirt, trying himself to retrieve the packet, is none other than Pinkerton Agent Adam Skelding.  His mission – find the hidden monies and treasures before it can be used to finance this uprise.  His problem, other than Marilla – the letters contained in the packet are in code.

I thoroughly enjoyed reading Adam’s Treasure.  I never skip to the back of a book when reading and since the resources were listed at the back, I had no idea as to how much research and actually facts went into the writing of Adam’s Treasure.  I know why the book was so believable.  If you enjoy Historical Romances, you will love this book.

The Way - Catherine MacDonald, Author

Sonoma Valley Bruschetta

Start with a large saute or frying pan and add about 1-2 T of olive oil
Add 1/3 chopped onion
1-2 cloves of diced garlic
1 can cannelloni beans, drained first
Add 2 handfuls of fresh chopped spinach
Add 2-3 diced and seeded tomatoes
2 springs fresh chopped rosemary
Handful of chopped fresh parsley
Cook the mixture together for about 10 minutes.
Add salt and pepper to taste
Place on fresh or toasted bread and serve with your favorite glass of wine
This brushetta can be served cold or warm

 ‘No wonder people are stressed out.  How can one become balanced when the media and greedy corporations persuade you that you need this brand new car, or an energy-efficient mini-mansion, a Big Mac with curly fries, or a multitude of medications just to make it through the day?  And not to worry if you do not have the cash – the credit card companies are there to hand out those shiny plastic cards so you can have your heart’s desire and pay for it at a much later date, with interest of course.’
 
Wanda McBroom, who has become the teacher of The Way, speaks these words which are exactly how our world has become today.  We are all on the road to self destruction due to the demands placed upon us to keep up.  In the book The Way, Author Catherine MacDonald introduces 3 fictional characters who are sent to Wanda in hopes of finding the answers to life.  Melissa becomes depressed and blames her husband for the death of their daughter.  Lori is an alcoholic, disowned by her sister, who will do anything to acquire money for alcohol and sex, even if it means stealing.  And Jenny has tried to commit suicide several times  and failed, just as her marriage and everything else in her life has failed.  Through Wanda’s teaching of the way, there is hope that these 3 women can be helped and live happy, productive lives.
 
Catherine MacDonald points out to us that “there are 2 directions you can take.  You can go toward the darkness with negative thoughts and actions or toward the light with your energy and optimism.  You reap what you sow.  If you do business or conduct yourself in a negative fashion, they you will get negative results.  Success and happiness in life are not measured by money, power, or status.  We are not what we wear, the house we live in, nor the car that we drive.”  These statements are so true. 
 
We are all looking for the “secret” to life, success and happiness.  I’ve read self-help, self-improvement books for years.  They all seem to say the same thing but they all seem to leave out the most important step to make them really work.  After reading The Way, I’ve discovered that the main ingredient left out is YOU!  You must make changes in your inter-self.  The Way gives you examples as to how these 3 women learned The Way and used the teachings to create real lives for themselves.  But, at the back of the book Catherine MacDonald not only gives you the steps themselves but she has also given you directions through a simple questionnaire that will help you too implement The Way into your own life.  And for those of you who are wondering, yes God is a part of The Way to a more peaceful life.  
 
I see this as a book that would benefit us all, not just in reading but in following.  I’m on step #1 and can’t wait to go to the next.

Button Hollow Chronicles No. 1: The Leaf Peeper Murders - Loni Emmert and P.I. Barrington, Authors

Amazing Crust Pizza 
  Loni Emmert and P.I. Barrington's favorite recipe

1 package of Yeast
1/4 Cup of Warm Water
2 Cups of Warm Milk
1 1/2 tsp of Salt
5 tablespoons of Sugar
5 tablespoons of Oil
6 Cups of Flour
Large pinch of powdered garlic
 Pizza toppings of your choice

Soften yeast in warm water, add 1 tablespoon sugar. Let stand for five minutes. Add warm milk, salt, sugar and oil. Add flour. Allow dough to rise and then punch down. Allow dough to rise again and then roll or spread out on your preferred pan type for pizza. For thin crust pizza separate dough in half and spread each half onto your preferred pan type.

Cover with your preferred pizza sauce and toppings, bake for approximately 25 – 35 minutes or until edge of crust is browned but not burned.

Cheese lovers: You can also sprinkle the edge of the crust with grated parmesan or mozzarella cheese before baking.

This simple recipe dough is amazing and delicious and can also be used for garlic rolls (add a second large pinch of powdered garlic and after baking smother with garlic butter) or dinner rolls (omit all powdered garlic), roll into balls and bake for 25-25 minutes or until golden brown.

The Leaf Peeper Murders – Review by Martha A. Cheves, Author of Stir, Laugh, Repeat

‘The lovely Indian summer midmorning sun of Button Hollow, New Hampshire, shown on her when the elderly Mrs. Anne Jolie Watson smelled trouble, literally. She had just begun to water the last of her flower beds when the unwelcome smell of chlorine rose to her nostrils like chemical petals on the wind. She sniffed the air in several directions trying to ascertain from whence the odor wafted. It seemed to permeate the entire front garden although the culprit was nowhere to be seen. She knew that smell. She had read about it in a national newspaper in a story about illegal drug laboratories popping up in the smallest, most unlikely of towns across America. The first clue to the nefarious activities, the story said, was the aroma of chemicals, chlorine being one of the first and most obvious. And chlorine was definitely in the air in Button Hollow. No, she assured herself, there was no mistaking the smell of chlorine. Why, one would have to be a fool not to recognize that illegal substance.’

Mrs. Anne Jolie Watson is a member of the newly instated Citizens’ Brigade set up by Mayor Tom Rutledge, as an attempt to give the Senior Citizens of Button Hollow something to do and feel needed. And there is no one more qualified to be included as a member of the Brigade than Anne Jolie Watson. If you don’t believe me, ask her yourself. Nothing happens in the town of Button Hollow that Anne Jolie doesn’t know about and no one comes into town without her knowing. If by some chance she misses something, she will make it her business to become updated, ahead of anyone else in the town. This is her town and it’s her job to protect it from all wrong doings. Of course, having her nephew as the deputy of Button Hollow helps keep her updated. After all, he’s the one who told her about the two murders in town. One was the town drunk and the other was the town prostitute. Well, it didn’t matter to Anne Jolie what the “profession” of these two citizens happened to be, they were still murdered and she would leave no stone unturned until she found the guilty person that took their lives.

Sheriff Jeff Ramsey has lived in Button Hollow his whole life and knows everyone, including the persistent Mrs. Watson. He really has enough on his hands without adding her help to his problems. Especially when she and another member of the Brigade decide to do a stake-out on the person that Anne Jolie just knows is responsible for all crimes going on in town. So, who will solve the murders first? The Sheriff or Citizens Brigade member Mrs. Anne Jolie Watson?

As I read The Leaf Peeper Murders I couldn’t help but laugh at the antics of Anne Jolie Watson. I feel sure that as you read this book, you too will get a good laugh and it will probably be because you too know someone that is of the same character as Anne Jolie. I know several. Even though this is a murder mystery, it’s still full of humor.

Children of Dreams - Lorilyn Roberts, Author

Chinese Salsa Noodle Soup
  A Lorilyn Roberts Favorite


1 can of beef broth
½ cup fresh salsa (mild, medium, or hot)
2 tablespoons of chopped spring onion
3/4 cup frozen Chinese noodles
3 tablespoons of red or white cooking wine
a dash of pepper
¼ cup sour cream

You mix everything together except the sour cream on the stove and cook it long enough till the frozen noodles are at the consistency you want. When the noodles are the way you want them, then add the sour cream and stir until it’s completely mixed in.

I made up this recipe and so it’s one of my favorites:)

‘Nepal is the forty-eighth poorest country in the world. Out of a population of eighteen million, six million drink water we wouldn’t give to our dogs… later I would find out what drinking contaminated water could do to a seven-year-old child…. Nepal’s per capital income was only $180 per year, one of the lowest in the world and the lowest in South Asia, where the average per capital income was $350 per year. Of its eighteen million inhabitants, half live in abject poverty.’

‘I was surprised by my first impressions of North Vietnam. I had expected to see more than just vestiges of communism as a result of the Vietnam War. Quite to the contrary, the Vietnamese had adopted a lot of our Western culture – selling our music, speaking our language, and owning their own shops, resulting in a vibrant, capitalistic economy. My uneducated mindset of a people living in apathy or without freedom was turned on it head as the North Vietnamese appeared to be hard-working and content. They showed an endearing love for their children, were kind to me, and harbored no ill-will toward Americans.’

What would entice Children of Dreams Author Lorilyn Roberts to take a trip to Nepal, which is a small country positioned between China and India, and then to Vietnam? Children! Lorilyn’s ideal future, consisting of a happy marriage, advanced education and a family came to an end when her husband asked for a divorce. This was the man that she had put her own education on hold for so that he could go to medical school. And to make matters worse, shortly after the divorce, his girlfriend gave him something that she had not been able to: A child, Here she was with nothing but dreams that would never come true. At least that’s what she thought.

Her life was revitalized when God showed her a picture of a 3 year old little girl living with her father in Nepal. The only future this child had was unsanitary living conditions and food, then death. It would be a miracle if she lived to be 7. Lorilyn knew, after seeing this child's picture, that this would be the daughter given to her by God. Then, several years later, Lorilyn received a picture of another beautiful little girl living in Vietnam with her birth mother who could not provide for her. So now Lorilyn would have her family. Two beautiful daughters that would grow up knowing the love of a mother and the love of God. But these daughters didn't come easy. Nothing had prepared Lorilyn for what she would face while rescuing her daughters out of their dark world of poverty.

Through her journey of adoption in Nepal, Lorilyn was faced with problems that would have caused most of us to walk away from the idea of adoption. But through her determination and her strong belief that God had sent her to this poverty stricken country to rescue one of His children, Lorilyn stays to the end. Even later when she made her trip to Vietnam to rescue Joy, who would be her second daughter, she finds herself facing problems but of a different type. In Nepal she had to be content with the filth not only of the living arrangements but also the food and water. In Vietnam she must deal with an adoption agent that isn’t quite on the up and up.
