DUNDEE TEA BARS Ann Keller
(Scottish)

Makes 25 bars
Oven - 325 degrees
Bake - 25-30 minutes

½ C Margarine ) Mix
½ Sugar )
2 Large Eggs ) Add
1 tsp. Vanilla )
1-½ C Flour
1 tsp. Baking powder
½ tsp. Nutmeg
¼ C Chopped Maraschino cherries
½ C Raisins (check for stems)

Prepare 9” square pan with shortening, waxed paper, shortening. When all mixed, pour mixture into prepared pan and bake at 325 degrees for 25-30 minutes. When baked, cool 5 minutes and flip over onto towel. Peel off waxed paper. Turn right side up to cool, then ice with thin powdered sugar glaze.

This recipe is very old and has been passed down in my family from mother to daughter in the Clan MacKnight for generations. Traditionally, these bar cookies were served at Christmas and Easter, although their wonderful flavor is delightful any time of year.
